I wait, and I wait.

As a child, I waited for birthday parties and summer vacations. 

As a teenager, I waited for my first kiss, pierced ears, a date for the prom, and a college acceptance letter. 

As a young woman, I waited for the perfect job, the perfect partner, the sound of little feet running around my home. 

Lately, it seems that like most other people, I am waiting for life to take on some kind of normalcy, and as I wait I wonder what that normalcy might look like.

Life is a waiting game, but often we are so focused on waiting that we forget about living.

I have vowed to spend more time focusing on living in the moment.

Instant Pot Recipe Of The Week

Yes, I have finally started cooking in my new Instant Pot, and one of the first recipes I tried was this Lemon Garlic Chicken.

It was easy and delicious and ready in 30 minutes. 

I served it with some leftover white rice from the night before and asparagus. 

Two large chicken breasts will feed me for four meals.

Gluten-Free Recipe Of The Week

When I was growing up I remember my mom making the best spice cake. 

She loved to bake and although I didn't inherit that baking love I was excited to come across this gluten-free spice cake recipe.

I haven't had a chance to bake it yet, but I am really looking forward to trying it out.

  1. This is such a great post, Laura! We do get caught up in waiting for the next things that we forget to live in the moment. As someone who loves to plan and cross things off my to-do list each day I've become very intentional about what actually makes the list now days so I don't get to busy I forget to stop and enjoy the little things.   2. You are so right Laura. I used to be like that... wait wait wait... for something different or good to happen.. or wait for those plans to take shape, or wait for the trip or whatever. These days, I am just happy to be here in the moment... taking each day as it comes and trying to find pleasure in the little things. I don't plan so much anymore, as my new motto is Let Go and Let God.. he has a plan and it will come and show me what it is at the right time. Of course, being of an older age, we don't want to rush things along... so it's easier to just be patient and actually hope that time slows down and the days dont' pass so fast! Take care.. Marilyn

  3. I was always the person waiting for something too. Now I try to live in the moment and take it one day at a time. That chicken looks so good. I am going to check out that card game on Amazon too. We are a family that likes to play games. Happy Saturday.

  4. As some one wise once told me, time is going to go by anyway, so you might as well enjoy it or do something productive with it.
    The chicken looks so good, it may just convince me to buy an air fryer.
