Simple Pleasures #34

Tuesday was a perfect spring day. 

The sun was shining, it was warm, and spring was bursting out all over. 

My two daughters, Tessa, and I decided it was too perfect to waste so we headed out for a few hours at the Botanical Gardens in Atlanta.

The most wonderful part about it was that it was Katy's first real outing in over two years. 

We only walked through the outdoor areas and we kept our masks on, but it was so nice to have a girls' day out. 

Tessa kept track on the map of where we were in the gardens, which was a good thing because I kind of got lost in there last month.

The tulips were absolutely gorgeous and there were so many tulips in so many different colors I felt like I was walking in Holland.

Just looking at this socca pizza with hemp and pumpkin seed kale pesto made my mouth water.

SOCCA PIZZA WITH HEMP AND PUMPKIN SEED KALE PESTO (GLUTEN-FREE & VEGAN)

I had never heard of socca pizza and wondered what it was. 

The batter is a simple mix of chickpea flour, water, olive oil, and salt.

You can cook the batter in the oven or on top of the stove in a cast-iron skillet.

Once the batter is cooked you just remove it from the pan and add the toppings.

So easy, tasty, and healthy.

I have been waiting somewhat patiently for this book to come out.

This is the first book in a spin-off series of Karen White's Tradd Street novels. 

This new series takes place in New Orleans and once again combines ghosts and mysteries. 

Nola Trenholm is all grown up and has bought her first house, but the previous residents don't want to depart. 

She is determined to make the old Creole cottage her own whether the resident restless spirits agree or not.

I just started the book last night and already loving it.
