I love sweet potatoes.

People seem to equate sweet potatoes with Thanksgiving and Christmas and while those sweet potato casseroles are yummy sweet potatoes are good eating all year.

Sweet potatoes are a good source of potassium, fiber, vitamins, and other essential nutrients.

As much as I love eating baked sweet potatoes, I am always looking for new ways to cook them.

Scalloped Sweet Potatoes

When I was growing up my mom always made scalloped potatoes and they were one of my favorite dishes.

I'm kind of surprised I never thought to make scalloped sweet potatoes.

This recipe calls for ingredients you may already have on hand and it makes a delicious side dish.

I am adding it to my dinner list this week.


Sweet Potato Bread With Pecans

I am always on the lookout for a new quick bread recipe, and as a lover of pumpkin bread, I am sure this southern sweet potato bread will also become a favorite.

This is an easy one-bowl recipe that doesn't even require an electric mixer.

My plan is to use all-purpose gluten-free flour and I am adding buttermilk and pecans to this week's shopping list. 

I love buttermilk and it is great for tummy problems. 


Sweet Potato Cornbread

Cold weather means soup, chili, and pinto beans are on the menu and sweet potato cornbread is a perfect accompaniment to any of these dishes.

Dig out your cast iron skillet because people in the south know that cornbread is always best when made in a cast iron skillet. 

However, a cast iron skillet is not absolutely essential and this can be baked in another type of baking dish. 

Save a piece for breakfast because this sweet cornbread will be perfect with your morning coffee.


Sweet Potato Lentil Stew

Recently my daughter served lentil stew with sweet potatoes at her home and it was very tasty. 

This sweet potato lentil stew is a hearty winter vegetarian meal.

This recipe is also vegan, gluten-free, and dairy-free.

Like most stews, this is even better leftover so be prepared for two or three days of good eating.


Roasted Sweet Potatoes

Be prepared to put away those fries. Roasted sweet potatoes are yummy easy to make, and so much healthier.

This easy-to-make side dish is great reheated and can be frozen for up to six months. 

That means you can pull some of them out of the freezer and add them to a quick meal. 


Hopefully, you are as sold on sweet potatoes as I am.

  3. Oh my! I may have to get out the cast iron skillet! I am lazy though and just bake them and add butter! They are SO good for you...the potato...not the butter! haha!
