WAFFLES FOR DINNER

 Do you ever eat waffles for dinner?

Yesterday, on my birthday, I was on FaceTime with my grandchildren when Tessa asked me what I was having for dinner.

Tessa: What are you having for dinner, Nana?

Me: Oh I don't know. Maybe I will have a bowl of cereal.

Tessa: Cereal is not dinner.

Me: Okay, maybe I will have waffles.

Tessa: Now that's dinner.

Don't tell anyone, but waffles were my first choice. I didn't want to throw that out too quickly in case she vetoed that choice but I underestimated her love of waffles.

She was also concerned about my lack of cake, but let it be known that I know how to party and quickly whipped up this birthday dessert.

Now, this is a do as I say and not as I do post. Full disclosure my waffles were the pop in the toaster kind of waffles. (they were healthy paleo waffles though)

For those of you who are less lazy than I am, I have rounded up some great recipes for homemade waffles.

Pumpkin Spice Waffles

You do not have to limit your eating of pumpkin waffles to the fall. I say live dangerously and eat pumpkin spice waffles year-round.

I love the smell of pumpkin and these waffles seem pretty easy with ingredients that are easy to find. Be sure to use pumpkin puree.

Gluten-Free Waffles

Yes, there are gluten-free waffle recipes for those of us who are gluten-free and this recipe claims to be the best.

Look how light and fluffy they are. Bob's Redmill 1 to 1 flour mix was used in the recipe and it is one of my favorites.

Glaze Apple Fritter Waffles

I don't know about you, but I am a huge fan of apple fritters so of course I immediately had to check out these waffles.

Bite-size apple chunks and icing make me feel like these are very dessert-like.

Classic Waffles

For those of you who like good old-fashioned waffles, this classic waffle recipe is for you.

There is nothing fancy pantsy about these waffles. They are just good old deliciousness like mama used to make. 

Be sure and follow her secret tip about warm milk.

Chocolate Brownie Waffles

Surely you know me well enough to know that if there was a chocolate waffle recipe out there I was going to find it.

I know these would get the Tessa seal of approval, but I am going to refrain from mentioning them to her because I don't want her mom to give me the stink eye.

These were actually made using a chocolate fudge brownie mix so even I could whip them up.

Today's post has inspired me to drag down my waffle maker from the top of my refrigerator and make some homemade waffles.


For you traditionalists who think waffles are only for breakfast, I invite you to be bold and try them for dinner.

  2. Yes I've been known to have breakfast for dinner. sometimes waffles are so perfect as you just pop them in the toaster! Those are the best kind! I try to make my own, using gluten free or paleo flour, and make a bunch, and then I freeze them separately in baggies. That way, I can pull one or two out whenever I feel the urge. Of course, they are wonderful with whipped cream and fruit on them. I sometimes like just jam and a little powdered sugar on them (with butter of course). I also love eggs and bacon for dinner now and then. Marilyn

  3. I buy the canned fried apples found on the grocery store fruit aisle near the applesauce. Heat with a little butter and cinnamon for a delicious waffle topping. Add a sausage patty for a feast that would impress even little Tessa. Hope you enjoyed your birthday.

  5. Happy Birthday, Laura! Now, waffles - that's my kind of dinner! Those chocolate brownie waffles look amazing! I don't have room for a waffle maker here in Florida (my kitchen is about the size of a toaster waffle), but maybe I'll have to get one when I'm back in NJ, because these recipes are tempting!
