I am also working my way through my pantry and my freezer, only purchasing items that I can't keep long term.
Once I have whittled down what I have on hand I will start to plan my grocery shopping so that I am not wasting any food.
After digging around in the back of my pantry I came up with a can of tuna. I had an avocado I purchased a couple of days ago, so I had the makings for a simple lunch.
Tuna Salad Stuffed Avocado:
1/2 can tuna
1/2 celery stalk chopped
gluten free mayonnaise to taste
mix up ingredients and stuff into split avocado.
Doesn't get much simpler than that.
A cup of hot decaf green tea sweetened with honey from my daughter's beehives made a perfect drink on a cold day.
And look what this girl who can't tolerate chocolate found.
My daughter told me that it is the emulsifiers we use in the US in chocolate that cause the problems. She said to look for chocolate that only has two ingredients.
While in Whole Foods this week, I found this Raw Chocolate. Only two ingredients and perfect for someone like me.
The only drawback is that it is a bit pricey, so I have to eat it sparingly. Hard for a chocoholic like me, but well worth it.
I'm pretty satisfied with my simple lunch, and tonight I will have a piece of grilled salmon and some acorn squash. What's on your menu today?
Well, you're eating well! I commend you. For lunch I had one of those little plastic thingies of mac & cheese with tuna added in the bowl. I'm not at all talented with coming up with things like tuna in avocado. Wouldn't even occur to me unfortunately!

ReplyDeleteI never knew that there was a different chocolate like that. I love chocolate too but it doesn't give me problems (that I'm aware of). I try not to over indulge too. I'm trying to cut back fat and exercise more. Your lunch looks good. I have tuna fish in my pantry too. Hmmmm...... I wish I liked avocados. They're so good for you. Your dinner sounds good and healthy too. Salmon is great for my diet since it helps reduce inflammation.
ReplyDeleteLike you, I am eating very healthy. (Although I blew it a little this weekend when we ate out. Back on track today.) I like your idea of putting tuna in the avocado half. I've been eating mashed avocado (with lemon, salt & pepper) on gluten-free toast and then topping with a sunny-side up egg. Last week, I made a healthy tuna pasta salad (with GF pasta).
ReplyDeleteI've never seen the chocolate you mentioned. I've been buying Theo organic chocolate. I like it because I can (mostly) control myself with it since it's dark chocolate - and it doesn't have soy lecithin in it. It's hard to find chocolate without this ingredient in it.
Your avocado/tuna lunch looked so fresh and delicious. I hadn't thought about having my tuna salad with avocado before, but I will be having it real soon now. I'll be putting some sweet little cherry tomatoes on my plate, too.
