inspiration on a thursday

Today's inspiration is short, but very important. For it is how we start our day that carries us forward for the rest of that day.

via

Tomorrow I will be on the road again, heading down to Georgia for a week's vacation. I'm taking my mother with me so we can be there for the celebration of a special birthday.

Yes, our little sweet angel is turning one next week. Where has the year gone.

I'll be sure and keep in touch while I am away and I will be taking lots of photos of the celebration.

I'm a Swinger

Not that kind of swinger silly.

I'm the kind of girl who loves to sit on the porch in a good old fashioned porch swing.

via

I have to confess.

Whenever I see a porch swing

via

I just feel the urge to sit myself down.

And let's face it

Some swings are a bit more comfortable than others

via

but I don't really care what the porch swing looks like.

via

it can be simple

via

or it can be fancy dancy

via

it really doesn't matter to me.

of course a good view never hurts.

via

because, you see, I've wasted spent many a rewarding hour sitting and swinging on the porch.

Come join me at warm welcomes. I bet I'll have you swinging in no time, too. I promise not to tell your spouse. It will be our little secret.

my friends are not spam

Dear Yahoo Mail,

We have had a long and for the most part good relationship, but my heart is feeling sad and anger is starting to bubble over because you have decided that my friends are spam. I just want you to know they are not spam. They are the people who brighten my day. I love reading their blog posts and you, in your infinite wisdom, have chosen to send them to my spam file. So I will now be rethinking our relationship and checking that pesky spam folder each day to see who you have trashed.

Sincerely,
Laura

P.S. Those emails that you do let in informing me that I have won one million dollars in the UK lottery and to just send five thousand dollars to get it are indeed spam. Maybe your filters need a little fine tuning.

I began to wonder if everyone had stopped blogging for the last couple of weeks, as none of the posts were showing up in my email. As I am a little slow on the uptake, I finally decided to check my spam folder, and oh my goodness, there you all were.

GRRRRRRRRRRRRRRRRRRRRRRRRR!!!!

So, I will be spending a little less time stopping to smell the roses this weekend as I will be trying to catch up on all of your wonderful posts.

Thursday's Inspiration

I am devoting each Thursday to a positive affirmation, because

 Today I choose love,

joy,

and freedom

as I open my heart and allow wonderful things to flow into my life.

Thanks to positive affirmations for today's inspiration.

I am heading out to an auction this afternoon. I am working to get my shop back up to pre-surgery level, which means lots more working and doing what I love best. It also means wonderful new vintage items will be appearing in the shop

step into my potting shed

Okay, well I don't actually have a potting shed of my own, but a girl can dream, can't she.

As a child I spent many happy hours at the florist and greenhouses that my grandfather started in the early 1900s.

via

My mother grew up in the house next door, which you can see a glimpse of to the left. My cousin's family now runs the business and lives in the house, but I retain wonderful memories of carefree days playing in the greenhouses and sitting with my grandfather in the old potting shed in the back. It is where my love of gardening was born.

via

These days I diligently pin garden shed inspiration in hopes of one day having my own.

A rustic garden house with climbing roses. Yes please

via

Love the tiny old church feel of this one.

via

A sweet little hideaway shed would work for me.

via

I could spend hours in here on a wet day listening to the rain on the tin roof.

via

I definitely envision lots of clay pots in my shed.

via

If you love potting sheds, I would love to have you join me on my garden shed board on Pinterest.

the mountains are calling

It's June. The weather is warm yet unpredictable and the mountains were calling my name.

There is nothing more soothing  than a muddy river.

Maybe I should follow it to see where it leads.

But then, the road ahead is so enticing.

and that bench sure looks like a great spot to sit and enjoy the quiet of the hills.

yes, the mountains of Kentucky were calling my name.

and I answered.

they are all beautiful

Some flowers have a hardscrabble life. They break free from soils that are rocky and strewn with trash, environments that are less than supportive, and yet they grow and blossom despite the odds.

Other flowers are just emerging. They are growing and planning how to share their gifts with us.

And then there are those flowers that have been nurtured with rich soil. They have been watered and given light and we enjoy the beauty they have been blessed with.

Every flower is beautiful. They all give us pleasure.

Just like people.

enjoying summer's bounty

It's that time of year again when I love to make and share my favorite summer casserole.

I have been making this dish since my college days in the 1970s, and have served it to many people who swear that they don't like eggplant. It is always a big hit. My daughters even liked it when they were kids, and although they are both now pescetarians, they wouldn't voluntarily allow a vegetable to pass their lips as children.

I have hung onto my copy of the Vegetarian Epicure for 40 years, just because I love this recipe.

 Eggplant Tomato Casserole
from the original  "The Vegetarian Epicure Cookbook"

1 large eggplant (about 1 1/2 lb.)

1 1/2 tsp. salt (optional)
2 eggs, beaten

2 Tbs. melted low cal margarine (or butter)
ground pepper,

2 to 3 tbs. chopped onion
1/2 tsp. crushed oregano

1/2 cup dry bread crumbs (I'm making my own gluten free bread crumbs)
2 large tomatoes, sliced thin

2 oz. cheddar cheese, grated
1/4 cup grated parmesan cheese,
paprika

P
eel and slice the eggplant. Put the slices in a pan with the salt and about an inch of boiling water. Cover tightly and cook about 10 minutes. Drain. Mash the eggplant and mix in the eggs, melted butter, pepper, onion, oregano and bread crumbs.
Butter a shallow 1 1/2 qt. baking dish. Cover the bottom with half the tomato slices. Spoon in all of the eggplant mixture and spread evenly. Arrange the rest of the tomato slices on top. Mix together the cheeses and sprinkle over the top layer of tomatoes. Add a sprinkle of paprika and bake at 375 degrees for about 45 minutes.

Then just serve and enjoy.

This is what I am making for dinner tonight. What's on your menu?

inspiration on a thursday

Every morning when I wake up, I start my day with a positive affirmation.

Because I believe that

via

So each Thursday, I am going to devote my blog to a positive affirmation.

Today I will thank myself for my strength

it carried me this far

and I've come a long way.

so each day I will continue to reach for the sky.

Yesterday, right after I did my positive affirmation I got a call from the sheriff in North Carolina. They have spoken with the woman who has my property and she has agreed to give it back. She will be out of town for the next month or more and so asked if we could do the transfer in early September. I agreed because this actually works for my move at the end of the summer. As I still haven't made a decision about where I will be going, I hopefully will now not have to move it twice.

I'm going to keep those positive affirmations and prayers rolling.
