Grilled Cheese with Tomato and Basil

September is here, and although it is still officially summer, I know that cooler weather is on the way. I love grilled cheese sandwiches, and while there are still plenty of fresh tomatoes to be had at the farmer's market, I think this recipe is the perfect way to combine the two seasons. 

I found this recipe at Martha Stewart Living awhile ago and thought this would a great time to share it with you. You can fix it the traditional way in a skillet, or pop it on to your grill.




Grilled Cheese with Tomato and Basil


Ingredients

  • 2 tablespoons unsalted butter, room temperature
  • 8 slices white bread (I actually prefer whole grain)
  • 12 ounces Gouda or Swiss cheese (any cheese that melts easily will work, so pick your favorite)
  • 1 large ripe tomato, thinly sliced
  • 1 handful fresh basil leaves

Directions


  1. Butter one side of each slice of bread. Arrange 4 slices, buttered side down, on clean work surface. Divide cheese evenly among 4 slices of bread. Arrange tomato slices over cheese, cutting slices in half to fit if necessary. Scatter basil leaves over tomatoes. Top with remaining slices of bread, buttered side up.
  2. Place sandwiches on a medium-hot grill, off direct heat. Cook until bread is golden and cheese is beginning to melt, about 4 minutes depending on heat of grill.
  3. Turn sandwiches over, and continue grilling until bread is golden and cheese is completely melted. Move to a slightly cooler part of the grill to melt if bread is darkening too much.

I think I may head over to the Sunday afternoon farmer's market and pick up some fresh tomatoes. This sounds like a nice simple dinner tonight with a fresh salad.

  3. I eat tomato/cheese sandwiches all summer long - they are one of my favorite lunches. They are really good cooked open faced in the broiler too. Yum!

  10. My Italian grandmother would sprinkle oregano, salt, pepper and a splash of olive oil when she would make a grilled cheese sandwich for me, I thought they tasted like pizza. Many summers I would have one every day for lunch. Adding the fresh basil sounds yummy. The market near me carries crusty bread with olives baked in. Doesn't that sound even better? Yum!
